Recipe for Left-over Baked Potato Soup

I am on a new mission to not waste any food in my house.  I had some left over baked potatoes from last week that I decided to use tonight in a quick potato soup.

3 baked potatoes cut into small chunks
enough whole milk to cover potatoes and make soupy
1/2 cup light sour cream
salt
pepper
garlic powder
onion powder
cheddar or colby jack cheese for topping

Put the potatoes in a pot and cover with milk and sour cream.  Turn stove to medium heat.  Add spices and stir.  Let cook without boiling four about 15-20 min. until potatoes are warmed and flavors combine.  Use a hand held potato masher to partially mash up potatoes.  Ladle into bowls and top with shredded cheese.  Yum!  My husband surprised me by saying this was (almost) a resturant quality combination. :)  Needed a little more salt.
